  1. Preheat the oven to 425°F (220°C). In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Cut the cold butter into small cubes and add it to the flour mixture. Use your fingers or a pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs.
  3. Stir in the shredded cheddar cheese and chopped apple.
  4. In a separate bowl, whisk together the egg, heavy cream, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Pat the dough into a circle about 1-inch thick.
  6. Cut the dough into 8 wedges and transfer them to a baking sheet lined with parchment paper.
  7. Bake for 15-20 minutes, or until the scones are golden brown.
  8. Remove from the oven and let the scones cool on a wire rack for 10 minutes before serving.
