Andes Mint Cookies are inspired by the popular Andes chocolate mint candies.

Preheat the oven to 350°F (175°C).

In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.

Beat in the eggs one at a time, then stir in the vanilla.

In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients and mix until well combined.

Drop rounded tablespoons of dough onto ungreased baking sheets.

Bake for 8-10 minutes, or until set.

Remove from the oven and immediately press an Andes mint onto each cookie.

Allow the cookies to cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
