Boil the potatoes until they are soft. Peel and mash them.

In a large bowl, combine the mashed potatoes, finely chopped green chilies, grated ginger, chopped coriander leaves, cumin powder, and salt. Mix well.

In another bowl, add wheat flour, ghee, and a pinch of salt. Gradually add water and knead into a soft dough.

Divide the dough and potato mixture into equal portions.

Take a portion of the dough and roll it into a small circle. Place a portion of the potato mixture in the center and seal the edges to form a ball.

Roll the stuffed ball into a flatbread.

Heat a tawa or griddle and cook the paratha on both sides until golden brown.

Serve hot with yogurt, pickle, or chutney.
