Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together oats, flour, brown sugar, baking powder, and salt.
  3. Cut the cold butter into small cubes and add it to the dry mixture. Use your fingers or a pastry cutter to cut the butter into the mixture until it resembles coarse crumbs.
  4. In a separate bowl, whisk together the milk and vanilla extract. Pour the wet mixture into the dry mixture and stir until just combined.
  5. Transfer the dough onto a floured surface and gently knead it a few times to bring it together. Shape the dough into a circle about 1 inch thick.
  6. Use a round biscuit cutter to cut out scones from the dough. Place the scones onto the prepared baking sheet.
  7. Bake for 15-20 minutes, or until the scones are golden brown.
  8. While the scones are baking, prepare the apple-pear butter. Peel and core the apple and pear, then dice them into small pieces. In a saucepan, combine the diced apple, pear, lemon juice, cinnamon, nutmeg, and honey. Cook over medium heat until the fruits are soft and easily mashed.
  9. Use a blender or immersion blender to puree the cooked fruits into a smooth butter consistency.
  10. Once the scones are done baking, remove them from the oven and let them cool for 10 minutes. Serve the scones with the apple-pear butter.
