  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix together the almonds, sugar, and cinnamon.
  3. Melt the butter in a saucepan over low heat.
  4. Unroll the kataifi dough and separate it into thin strands.
  5. Take a strand of kataifi dough and brush it with melted butter.
  6. Place a spoonful of the almond mixture on one end of the strand.
  7. Roll the strand tightly, enclosing the almond mixture.
  8. Repeat steps 5-7 with the remaining strands and almond mixture.
  9. Place the rolled kataifi on a baking sheet lined with parchment paper.
  10. Brush the tops of the rolled kataifi with melted butter.
  11. Bake in the preheated oven for 25 minutes, or until golden brown.
  12. Remove from the oven and let it rest for 10 minutes.
  13. Drizzle honey over the baked kataifi.
  14. Serve warm and enjoy!
