All-in-One Veggie Mac and Cheese
Mac and cheese originated in Italy, but it was popularized in the United States by Thomas Jefferson, who served it at a state dinner in 1802.

Cook the macaroni according to package instructions. Drain and set aside.

In a large pot, melt the butter over medium heat. Add the flour and cook for 1 minute, stirring constantly.

Slowly whisk in the milk, making sure there are no lumps. Cook for 5 minutes, until the mixture thickens.

Add the cheddar cheese and stir until melted. Stir in the parmesan cheese.

Add the cooked macaroni, broccoli florets, carrots, and frozen peas to the pot. Stir to combine.

Season with salt, black pepper, and paprika. Cook for an additional 5 minutes, until the vegetables are tender.

Remove from heat and let rest for 5 minutes before serving.
