Alfajores (Peruvian style)
Alfajores are a popular treat in Peru and are often enjoyed with a cup of coffee or tea.
This is vegetarian recipe. Dish can be prepared in 100 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 8.

In a bowl, mix the all-purpose flour, cornstarch, and powdered sugar.

Add the unsalted butter, egg yolks, and vanilla extract. Mix until the dough comes together.

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 350°F (180°C).

Roll out the dough on a lightly floured surface to about 1/4 inch (6 cm) thickness. Cut out circles using a round cookie cutter.

Place the circles on a baking sheet lined with parchment paper.

Bake for 10 minutes or until the edges are golden brown.

Let the cookies cool completely.

Spread dulce de leche on the bottom side of half of the cookies.

Sandwich the cookies together, pressing lightly.

Roll the edges of the cookies in shredded coconut.

Let the alfajores rest for 1 hour before serving.
