In a large bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add the cold water, 1 tablespoon at a time, until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

On a lightly floured surface, roll out the dough into a 12-inch (30 cm) circle. Transfer the dough to the prepared baking sheet.

In a medium bowl, toss together the plums, lemon juice, lemon zest, thyme leaves, cornstarch, and 1/4 cup of granulated sugar. Arrange the plum mixture in the center of the dough, leaving a 2-inch (5 cm) border.

Fold the edges of the dough over the plum mixture, pleating as necessary. Brush the edges of the dough with the beaten egg and sprinkle with turbinado sugar.
