In a mixing bowl, combine the masa harina, water, and salt. Mix well until a soft dough forms.

Divide the dough into 8 equal portions and flatten each portion to form a small disc.

In a separate bowl, mash the cooked pinto beans.

Take one disc of dough and place a spoonful of mashed beans and a spoonful of cheese in the center.

Fold the edges of the dough over the filling and seal the pupusa.

Heat oil in a skillet over medium heat and cook the pupusas for about 3-4 minutes on each side, until golden brown.

Serve hot with salsa or curtido (pickled cabbage salad).
