Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.

In a large bowl, whisk together the eggs and milk.

Add the grated zucchini, flour, baking powder, salt, black pepper, cheddar cheese, Parmesan cheese, and fresh parsley. Stir until well combined.

Pour the mixture into a greased baking dish.
