Yummy Veggie and Cheese Pasties
Pasties are a traditional British pastry dish that originated in Cornwall. They were originally made for miners to take to work as a complete meal.

Preheat the oven to 200°C (400°F).

In a pan, heat olive oil and sauté the onion and garlic until softened.

Add the mixed vegetables and cook until they are tender.

Remove from heat and let the mixture cool.

Roll out the puff pastry sheets and cut into squares.

Place a spoonful of the vegetable mixture and grated cheese in the center of each square.

Fold the pastry over to form a triangle and seal the edges with beaten egg.

Brush the pasties with beaten egg and sprinkle with salt and black pepper.

Bake in the preheated oven for 20-25 minutes or until golden brown.

Allow the pasties to rest for 5 minutes before serving.
