  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a saucepan, cook the quinoa according to package instructions.

  5. Add black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper to the skillet. Cook for 5 minutes.
