Preheat the oven to 350°F (175°C).

In a large skillet, melt the butter over medium heat. Add the onion and garlic, and sauté until softened.

Add the mushrooms and cook until they release their liquid and start to brown.

Stir in the spinach and cook until wilted.

In a large bowl, combine the bread cubes, mushroom mixture, thyme, salt, and black pepper.

Gradually pour in the vegetable broth, stirring until the mixture is evenly moistened.

Transfer the stuffing to a greased baking dish and cover with foil.

Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes or until the top is golden brown.

Let the stuffing rest for 5 minutes before serving.
