Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.

In a large bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, and salt.

Cut the cold unsalted butter into small cubes and add it to the flour mixture. Use your fingers or a pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs.

Stir in the shredded cheddar cheese.

In a separate bowl, whisk together the milk and honey. Pour the milk mixture into the flour mixture and stir until just combined.

Drop spoonfuls of the biscuit dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 12-15 minutes, or until the biscuits are golden brown.
