Rinse and drain the white beans and quinoa.

In a large pot, heat olive oil over medium heat and sauté onion and garlic until translucent.

Add shiitake mushrooms and cook for 5 minutes.

Add white beans, quinoa, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
