Wagon Wheel Cookies were inspired by the classic Wagon Wheel snack, which consists of a marshmallow sandwiched between two biscuits and covered in chocolate.

  1. In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  2. Add the egg and vanilla extract, and mix until well combined.
  3. In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Add the milk and mix until the dough comes together.
  6. Divide the dough into 12 equal portions and shape each portion into a ball.
  7. Place the dough balls on a baking sheet lined with parchment paper, and flatten each ball slightly.
  8. Bake in a preheated oven at 180°C (350°F) for 10 minutes.
  9. Remove the cookies from the oven and allow them to cool completely.
  10. Meanwhile, cut the marshmallows in half horizontally.
  11. Melt the dark chocolate and vegetable oil together in a microwave or double boiler.
  12. Dip each marshmallow half into the melted chocolate, then place it on top of a cooled cookie.
  13. Repeat with the remaining marshmallows and cookies.
  14. Allow the chocolate to set before serving.
