  1. In a large bowl, cream together the butter and icing sugar. Add in the vanilla extract and mix well.
  2. Gradually add in the plain flour and mix until a smooth dough forms.
  3. Divide the dough in half and add green food coloring to one half. Mix until the color is evenly distributed.
  4. Roll out the green dough and cut out Christmas tree shapes using a cookie cutter. Place them on a baking tray lined with parchment paper.
  5. Repeat with the plain dough, cutting out smaller Christmas tree shapes.
  6. Bake the cookies in a preheated oven at 180°C (350°F) for 15-20 minutes, or until golden brown.
  7. Allow the cookies to cool completely on a wire rack.
  8. Melt the white chocolate and use it to stack the cookies, starting with the larger plain cookies as the base and alternating with the green cookies to form a Christmas tree shape.
  9. Decorate the cookies with red candy balls.
  10. Allow the chocolate to set before serving.
