Vichyssoise Soup
Vichyssoise soup is believed to have been created by French chef Louis Diat in the early 20th century while working at the Ritz-Carlton in New York City. He named the soup after his hometown, Vichy, in France.

Peel and chop the potatoes, leeks, and onion.

In a large pot, melt the butter over medium heat.

Add the chopped vegetables and cook for about 5 minutes, stirring occasionally.

Pour in the broth and bring to a boil.

Reduce the heat, cover the pot, and simmer for about 20 minutes or until the vegetables are tender.

Remove the pot from the heat and let it cool slightly.

Use an immersion blender or a regular blender to puree the soup until smooth.

Stir in the heavy cream, salt, and white pepper.

Cover the pot and refrigerate for at least 1 hour or until chilled.

Serve the Vichyssoise soup cold, garnished with fresh chives or parsley.
