Very Berry Rhubarb Bars
Rhubarb is often mistaken for a fruit, but it is actually a vegetable!
This is vegetarian recipe. Dish can be prepared in 90 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Preheat the oven to 350°F (175°C). Grease a 9x9-inch (23x23 cm) baking dish.

In a large bowl, combine the rhubarb, mixed berries, and granulated sugar. Let it sit for 10 minutes.

In a separate bowl, mix together the all-purpose flour, rolled oats, brown sugar, baking powder, and salt.

Cut in the cold and cubed butter until the mixture resembles coarse crumbs.

In a small bowl, whisk together the vanilla extract, lemon zest, and egg. Add it to the flour mixture and mix until combined.

Press half of the mixture into the bottom of the prepared baking dish.

Spread the rhubarb and berry mixture over the crust.

Crumble the remaining flour mixture over the top.

Bake for 40 minutes or until the top is golden brown.

Allow the bars to cool in the pan for at least 30 minutes before cutting into squares.
