Preheat the oven to 350°F (175°C).

In a large bowl, combine the bread cubes, onion, celery, carrots, bell pepper, zucchini, mushrooms, olive oil, garlic, dried herbs, vegetable broth, salt, and black pepper.

Mix well until all ingredients are evenly coated.

Transfer the mixture to a baking dish and spread it out evenly.

Sprinkle Parmesan cheese on top.

Bake in the preheated oven for 40 minutes or until the vegetables are tender and the stuffing is golden brown.
