Vegetable Fried Rice
Fried rice is a popular dish in many Asian countries and is often made with leftover rice to reduce food waste.

Heat vegetable oil in a large pan or wok over medium heat. Add chopped onion and minced garlic. Cook until onion becomes translucent.

Push the onion and garlic to one side of the pan and crack the eggs into the other side. Scramble the eggs until cooked through, then mix them with the onion and garlic.

Add the mixed vegetables to the pan and stir-fry for 2-3 minutes until they start to soften.

Add the cooked rice to the pan and mix well with the vegetables.

Stir in soy sauce, sesame oil, salt, and pepper. Cook for another 2-3 minutes, stirring continuously.

Remove from heat and let it rest for 5 minutes before serving.
