  1. Cook the brown rice according to package instructions. Set aside.
  2. Heat the sesame oil in a large skillet or wok over medium heat.
  3. Add the onion and garlic to the skillet and sauté until fragrant.
  4. Add the mixed vegetables and cook until they are tender.
  5. Push the vegetables to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until cooked.
  6. Add the cooked brown rice to the skillet and stir-fry everything together.
  7. Season with soy sauce, salt, and black pepper.
  8. Continue to cook for a few more minutes until everything is well combined.
  9. Remove from heat and garnish with sliced green onions.
  10. Let it rest for 5 minutes before serving.
