Vanilla Sweet Potatoes
Sweet potatoes are not actually related to regular potatoes, they belong to the morning glory family.

Preheat the oven to 375°F (190°C).

Peel and slice the sweet potatoes into 1/4-inch thick rounds.

In a saucepan, melt the butter over medium heat. Stir in the vanilla extract, brown sugar, cinnamon, and salt.

Arrange the sweet potato slices in a baking dish. Pour the butter mixture over the sweet potatoes.

Cover the baking dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 10 minutes, or until the sweet potatoes are tender.
