  1. In a mixing bowl, cream together butter and powdered sugar until light and fluffy.
  2. Add vanilla extract and mix well.
  3. In a separate bowl, combine all-purpose flour, ground almonds, and salt.
  4. Gradually add the dry ingredients to the butter mixture, mixing until well combined.
  5. Divide the dough into two equal portions and shape each into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
  6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. On a lightly floured surface, roll out one portion of the dough to a thickness of about 1/4 inch.
  8. Using a half-moon cookie cutter, cut out cookies and place them on the prepared baking sheet.
  9. Repeat with the remaining dough.
  10. In a small bowl, whisk together egg yolks and milk.
  11. Brush the tops of the cookies with the egg wash and sprinkle with granulated sugar.
  12. Bake for 10-12 minutes or until the edges are golden brown.
  13. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
