In a mixing bowl, cream together butter and powdered sugar until light and fluffy.

In a separate bowl, combine all-purpose flour, ground almonds, and salt.

Gradually add the dry ingredients to the butter mixture, mixing until well combined.

Divide the dough into two equal portions and shape each into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

On a lightly floured surface, roll out one portion of the dough to a thickness of about 1/4 inch.

Using a half-moon cookie cutter, cut out cookies and place them on the prepared baking sheet.

In a small bowl, whisk together egg yolks and milk.

Brush the tops of the cookies with the egg wash and sprinkle with granulated sugar.
