Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large mixing bowl, combine the vanilla cupcake mix, cherry cola, vegetable oil, and eggs. Mix until well combined.
  3. Drain the maraschino cherries and chop them into small pieces. Fold the chopped cherries into the cupcake batter.
  4. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  5. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  6. Remove the cupcakes from the oven and let them cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.
  7. In a separate mixing bowl, cream the unsalted butter until smooth. Gradually add the powdered sugar and continue to cream until light and fluffy.
  8. Stir in the vanilla extract.
  9. Once the cupcakes are completely cooled, frost them with the cherry vanilla buttercream frosting.
  10. Garnish with additional maraschino cherries, if desired.
  11. Enjoy!
