  2. In a mixing bowl, combine the crust ingredients and press into the bottom of a greased cheesecake pan.
  3. In a separate bowl, beat the cream cheese, sugar, and vanilla extract until smooth.
  4. Add the eggs one at a time, beating well after each addition.
  5. Stir in the sour cream.
  6. Pour the mixture over the crust in the cheesecake pan.
  7. Bake for 30 minutes or until the center is set.
  8. Remove from the oven and let cool for 10 minutes.
  9. In a saucepan, combine the roasted strawberries, cornstarch, and water.
  10. Cook over medium heat until thickened, stirring constantly.
  11. Remove from heat and let cool.
