Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.

Remove from heat and stir in the unsalted butter until melted.

Pour the pastry cream into a bowl and cover with plastic wrap, pressing the wrap directly onto the surface of the cream to prevent a skin from forming.
