In a medium bowl, whisk together the flour, ginger, cinnamon, baking soda, and salt. Set aside.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the molasses, egg, and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Divide the dough in half and wrap each half in plastic wrap. Chill in the refrigerator for at least 1 hour.

Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.

Roll out the dough on a lightly floured surface to a 1/4-inch thickness. Use cookie cutters to cut out shapes.

Place the cookies on the prepared baking sheets, spacing them about 2 inches apart.
