Vanilla Bean Cheesecake

Preheat the oven to 325°F (163°C).

In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.

In a large bowl, beat the cream cheese and sugar until smooth. Add the sour cream and vanilla bean paste, and mix until well combined.

Add the eggs one at a time, beating well after each addition. Stir in the flour.

Pour the batter over the crust in the springform pan. Smooth the top with a spatula.

Bake for 55-60 minutes, or until the edges are set and the center is slightly jiggly.

Turn off the oven and leave the cheesecake inside for 1 hour.

Remove the cheesecake from the oven and let it cool to room temperature.

Refrigerate for at least 2 hours, or overnight, before serving.
