  6. In the same skillet, add the sliced potatoes and cook until golden brown, about 8-10 minutes.
  7. Season the potatoes with fresh thyme, salt, and black pepper.
  8. Remove the skillet from heat.
  9. Roll out the puff pastry and place it on top of the cooked potatoes in the skillet.
  10. Trim the excess pastry and tuck it into the sides of the skillet.
  11. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.
  12. Remove from the oven and let it rest for 10 minutes.
