Cut the tofu into small cubes. Blanch the spinach in boiling water for 1 minute, then drain and set aside.

In a small bowl, mix together soy sauce, sugar, water, and cornstarch.

Heat vegetable oil in a pan over medium heat. Add garlic and ginger, and stir-fry until fragrant.

Add tofu and shirasu to the pan, and stir-fry for 3-4 minutes.

Pour the sauce mixture into the pan and stir well. Cook for another 2-3 minutes until the sauce thickens.

Add the blanched spinach to the pan and mix well.

Drizzle sesame oil over the dish and serve hot.
