  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, cornstarch, baking soda, and salt.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and peppermint extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll the dough into 1-inch balls and place them on the prepared baking sheets. Use the bottom of a glass to flatten each ball to about 1/4-inch thickness.
  7. Bake for 8-10 minutes, or until the edges are set.
