  4. Gently fold in the cornstarch, white vinegar, lemon zest, orange zest, and grapefruit zest.
  5. Spoon the mixture onto the prepared baking sheet, forming a round shape with slightly raised edges.
  6. Bake in the preheated oven for 5 hours, then turn off the oven and let the pavlova cool completely inside.
  7. Once cooled, carefully transfer the pavlova to a serving plate.
  8. In a separate bowl, whip the cream until thick and spread it over the pavlova.
  9. Peel and segment the citrus fruits, removing any pith and seeds.
  10. Arrange the citrus segments on top of the whipped cream.
  11. Garnish with fresh mint leaves.
  12. Serve immediately and enjoy!
