Triple-Citrus Pavlova
Pavlova is a meringue-based dessert named after the Russian ballerina Anna Pavlova. It is believed to have been created in honor of her visit to Australia and New Zealand in the 1920s.

Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.

In a clean mixing bowl, beat the egg whites until soft peaks form.

Gradually add the granulated sugar while continuing to beat until stiff peaks form.

Gently fold in the cornstarch, white vinegar, lemon zest, orange zest, and grapefruit zest.

Spoon the mixture onto the prepared baking sheet, forming a round shape with slightly raised edges.

Bake in the preheated oven for 5 hours, then turn off the oven and let the pavlova cool completely inside.

Once cooled, carefully transfer the pavlova to a serving plate.

In a separate bowl, whip the cream until thick and spread it over the pavlova.

Peel and segment the citrus fruits, removing any pith and seeds.

Arrange the citrus segments on top of the whipped cream.

Garnish with fresh mint leaves.
