Preheat the oven to 180°C (350°F).

In a large bowl, cream together the butter and caster sugar until light and fluffy.

Sift in the plain flour and rice flour, then mix until the dough comes together.

Press the dough into a greased baking dish, smoothing the top with a spatula.

Prick the surface of the dough with a fork to prevent it from rising.

Bake in the preheated oven for 20 minutes, or until golden brown.

Remove from the oven and let it rest in the baking dish for 5 minutes.

Cut into squares or wedges while still warm, then transfer to a wire rack to cool completely.
