Add chopped onion and minced garlic, sauté until translucent.

Add rice to the pot and stir for 1-2 minutes.

Pour vegetable broth into the pot and bring to a boil.

Reduce heat to low, cover the pot, and simmer for 15 minutes.

While the rice is cooking, chop the tomatoes into small pieces.

After 15 minutes, add the chopped tomatoes, salt, and black pepper to the pot.

Cover the pot again and simmer for another 5-10 minutes until the rice is cooked and the tomatoes are soft.

Remove from heat and let it rest for 5 minutes.

Fluff the rice with a fork and garnish with fresh parsley.
