  1. In a mixing bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
  2. In a separate bowl, whisk together the sugar, egg yolks, and vanilla extract. Gradually add the wet mixture to the dry mixture, mixing until a dough forms.
  3. Divide the dough into two equal portions and shape each into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour.
  4. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  5. Roll out one disk of dough on a lightly floured surface to about 1/8-inch thickness. Cut out circles using a cookie cutter.
  6. Spoon a small amount of dulce de leche onto each circle. Fold the circles in half to form half-moons and press the edges to seal.
  7. Place the half-moons on the baking sheet and bake for 15-20 minutes, or until golden brown.
  8. Allow the half-moons to cool on a wire rack.
  9. Sprinkle with powdered sugar before serving.
