Instructions

  1. Preheat the oven to 350°F (175°C). Spread the shredded coconut on a baking sheet and toast it in the oven for about 5-7 minutes, stirring occasionally, until golden brown.
  2. In a medium saucepan, melt the butter over medium heat. Add the sugar, corn syrup, and condensed milk. Stir constantly until the mixture reaches a soft ball stage (about 235°F/113°C on a candy thermometer).
  3. Remove the saucepan from the heat and stir in the vanilla extract and toasted coconut.
  4. Drop spoonfuls of the mixture onto a parchment-lined baking sheet, shaping them into small candy shapes. Let them cool and set for about 30 minutes.
  5. In a microwave-safe bowl, melt the chocolate chips and vegetable shortening in the microwave, stirring every 30 seconds until smooth.
  6. Dip each candy into the melted chocolate mixture, coating it completely. Place the coated candies back on the parchment-lined baking sheet.
  7. Let the chocolate set at room temperature or place the candies in the refrigerator to speed up the process.
  8. Once the chocolate has hardened, the Toasted Coconut Samoa Candies are ready to be enjoyed!
