Crush 8 Oreo cookies in a food processor.

In a mixing bowl, combine the crushed Oreo cookies, cream cheese, and mint extract. Mix well until fully combined.

Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.

Freeze the balls for 30 minutes.

Meanwhile, melt the dark chocolate in a microwave-safe bowl.

Dip each frozen ball into the melted chocolate, coating it evenly.

Place the coated truffles back on the baking sheet and sprinkle crushed Oreo cookies on top.

Let the truffles set in the refrigerator for at least 30 minutes.
