Thimble Cookies
Thimble cookies got their name because the traditional method of making them is to press down on the center of each cookie with a thimble to create the indentation for the jam.

In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.

Add the egg yolk and vanilla extract, and mix well.

Gradually add the flour and mix until the dough comes together.

Shape the dough into small balls and place them on a baking sheet.

Use your thumb or the back of a spoon to create an indentation in the center of each cookie.

Fill each indentation with a small amount of jam.

Bake at 350°F (175°C) for 10-12 minutes or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Dust the cooled cookies with powdered sugar.
