Wash and dry the apples. Insert a wooden stick into the stem end of each apple.

In a medium saucepan, combine the sugar, butter, heavy cream, vanilla extract, and sea salt. Cook over medium heat, stirring constantly, until the mixture reaches 240°F (116°C) on a candy thermometer.

Remove the saucepan from heat and dip each apple into the caramel mixture, swirling to coat evenly. Allow excess caramel to drip off.

If desired, roll the caramel-coated apples in chopped nuts.

Place the caramel apples on a parchment-lined baking sheet and let them cool for at least 30 minutes.
