In a large bowl, combine flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs.

In a small bowl, whisk together egg yolks and ice cold water. Gradually add the egg yolk mixture to the flour mixture, tossing with a fork until dough forms.

Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C).

On a lightly floured surface, roll out the dough to fit a 9-inch tart pan. Press the dough into the pan and trim excess.
