Tex-Mex Tortilla Pockets

Preheat the oven to 400°F (200°C).

Heat olive oil in a skillet over medium heat. Add onion and red bell pepper, and cook until softened.

Add black beans, corn kernels, salt, and pepper to the skillet. Cook for another 2 minutes.

Place a tortilla on a flat surface. Spread a spoonful of sour cream and salsa on the tortilla.

Spoon the vegetable mixture onto one side of the tortilla. Top with grated cheddar cheese.

Fold the tortilla in half, enclosing the filling. Press gently to seal.

Repeat with the remaining tortillas and filling.

Place the tortilla pockets on a baking sheet and bake for 10-12 minutes, or until the cheese is melted and the tortillas are crispy.

Serve the Tex-Mex tortilla pockets with sliced avocado, fresh cilantro, and a squeeze of lime juice.
