  2. Add the red bell pepper, jalapeno pepper, and green onions to the skillet. Cook until the vegetables are softened, about 5 minutes.
  3. Add the black beans, corn kernels, ground cumin, chili powder, and salt to the skillet. Stir well to combine. Cook for an additional 2 minutes.
  4. Remove the vegetable mixture from the skillet and set aside.
  5. Place a tortilla in the skillet and sprinkle with 2 ounces of cheddar cheese.
  6. Spoon a quarter of the vegetable mixture onto one half of the tortilla. Fold the tortilla in half to create a quesadilla.
  7. Cook the quesadilla for 2-3 minutes on each side, until the cheese is melted and the tortilla is crispy.
  8. Repeat with the remaining tortillas, cheese, and vegetable mixture.
  9. Serve the quesadillas hot with sour cream, salsa, and fresh cilantro.
