  1. In a mixing bowl, combine flour and sugar. Cut butter into small pieces and add it to the bowl.
  2. Mix the ingredients with your hands until it resembles coarse crumbs.
  3. Add the egg yolk and water, then mix until the dough comes together.
  4. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
  5. Preheat the oven to 375°F (190°C).
  6. Roll out the dough on a lightly floured surface and cut out circles to fit your tart pans.
  7. Press the dough into the pans, making sure to create an even layer.
  8. Prick the bottom of the tart shells with a fork to prevent them from puffing up.
  9. Bake the tart shells in the preheated oven for 12-15 minutes, or until golden brown.
  10. Remove from the oven and let them cool completely before filling with your desired filling.
