Line a baking sheet with parchment paper.

In a large saucepan, combine the sugar, corn syrup, butter, cayenne pepper, and salt. Cook over medium heat, stirring constantly, until the sugar has dissolved.

Bring the mixture to a boil and cook for 5 minutes, without stirring.

Remove the saucepan from heat and stir in the vanilla extract and baking soda.

Quickly stir in the cashews until well coated.

Pour the mixture onto the prepared baking sheet and spread it out evenly.

Let the brittle cool and harden for about 30 minutes.
