Preheat the oven to 375°F (190°C).

In a mixing bowl, combine the tart cherries, granulated sugar, cornstarch, and lemon juice. Stir well to coat the cherries evenly.

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Cut the unsalted butter into small pieces and add it to the dry ingredients. Use your fingers or a pastry cutter to cut the butter into the flour mixture until it resembles coarse crumbs.

Add the milk and vanilla extract to the flour mixture. Stir until just combined.

Pour the cherry mixture into a baking dish and spread it evenly.

Drop spoonfuls of the cobbler topping over the cherries, covering them as much as possible.

Sprinkle turbinado sugar over the top of the cobbler.

Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the cherry filling is bubbling.
