  1. Preheat the oven to 180°C (350°F). Grease and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the eggs and granulated sugar until light and fluffy.
  3. Sift the all-purpose flour into the egg mixture and gently fold until well combined.
  4. Add the vanilla extract, lemon zest, and salt. Mix well.
  5. Pour the batter onto the prepared baking sheet and spread it evenly.
  6. Bake for 10-12 minutes or until the sponge is golden and springs back when lightly touched.
  7. While the sponge is baking, prepare the lemon curd. In a saucepan, combine the lemon juice, granulated sugar, egg yolks, butter, cornstarch, and salt.
  8. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
  9. Remove the sponge from the oven and let it cool for a few minutes.
  10. Dust a clean kitchen towel with powdered sugar.
  11. Invert the sponge onto the towel and carefully peel off the parchment paper.
  12. Spread the lemon curd evenly over the sponge.
  13. Starting from one end, gently roll the sponge tightly using the towel.
  14. Place the rolled Swiss roll on a serving platter and let it rest for about 30 minutes.
  15. Once cooled and set, dust the Swiss roll with powdered sugar.
  16. Slice and serve.
