  1. Preheat the oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork and bake them for 40 minutes or until tender.
  3. Heat olive oil in a pan and sauté the onion, garlic, and bell pepper until softened.
  4. Add the black beans, corn, cumin, chili powder, salt, and pepper to the pan and cook for 5 minutes.
  5. Remove the sweet potatoes from the oven and let them cool slightly.
  6. Cut the sweet potatoes in half lengthwise and scoop out some of the flesh to create a hollow.
  7. Mash the scooped-out sweet potato with the sautéed mixture.
  8. Stuff the sweet potato shells with the mixture and top with cheddar cheese.
  9. Place the stuffed sweet potatoes back in the oven for 5 minutes or until the cheese is melted.
  10. Garnish with chopped green onions and serve hot.
