Elegant Tarragon Twice Baked Potatoes

Preheat the oven to 400°F (200°C).

Wash the potatoes and pat them dry.

Prick the potatoes with a fork and place them directly on the oven rack. Bake for about 1 hour, or until the potatoes are tender.

Remove the potatoes from the oven and let them cool slightly.

Cut off the top of each potato and scoop out the flesh into a bowl, leaving a thin shell.

Mash the potato flesh with butter, sour cream, tarragon leaves, Parmesan cheese, salt, and black pepper.

Spoon the mixture back into the potato shells.

Place the stuffed potatoes on a baking sheet and bake for an additional 15-20 minutes, or until the tops are golden brown.

Remove from the oven and let them rest for 10 minutes before serving.
