  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchini into thin rounds and chop the onion and garlic.
  3. Heat olive oil in a skillet over medium heat. Sauté the onion and garlic until softened.
  4. In a bowl, whisk together the eggs, milk, salt, and black pepper.
  5. Layer half of the zucchini slices in a greased casserole dish. Top with half of the sautéed onion and garlic mixture.
  6. Pour half of the egg mixture over the zucchini.
  7. Repeat the layers with the remaining zucchini, onion and garlic mixture, and egg mixture.
  8. Sprinkle cheddar cheese and breadcrumbs on top.
  9. Bake in the preheated oven for 35-40 minutes, or until the casserole is set and the top is golden brown.
  10. Let the casserole rest for 10 minutes before serving.
